Baked Avocado Eggs!


Good morning! If you love avocado and eggs as much as I do, than you need to try these delicious Baked Avocado Eggs! This healthy and satisfying breakfast will keep you full throughout your morning. It is packed with protein, nutrients, antioxidants, potassium, and fiber.


Ingredients:

-1 Avocado

-2 eggs

-Mozzarella

-Tomato

-Everything but the bagel Seasoning

-Fresh basil


Next Step:

-Preheat oven to 400 F and line a baking sheet with parchment paper.

-Slice the avocado in half and remove the pit.

-Carefully scoop out a little bit of the middle of the avocado to make a deeper well.

-Crack the egg in a separate bowl.

-I like to add the egg yolk to the avocado first and then pour the egg white on top.

(Depending on the size of the avocado you may not need to use the whole egg.)

-Sprinkle everything but the bagel seasoning on top.

-Add a slice of tomato and fresh mozzarella on top.

-Bake for 20 minutes.

-Take out and garnish with fresh basil.

-Enjoy!
