Baked Artichoke Parmesan!


This Baked Artichoke Parmesan dinner is go tasty, cheesy, and delicious! The artichokes are crisp and flavorful, and the sauce and melted cheese make this dinner a favorite of mine! I love to pair this meal with a bowl of pasta.


Prep time: 15 minutes Cook time 30 minutes

Ingredients:

-1 can of organic artichoke hearts (in water-not the seasoned kind)

-2 eggs

-3/4 cup grated parmesan

-3/4 cup Italian seasoned bread crumbs

-1/4 teaspoon garlic powder

-1/4 teaspoon pepper

-1/2 cup shredded mozzerella

-5 fresh basil leaves

-1 28oz can of San Marzano crushed tomatoes

-1 large clove of garlic- chopped

-1/2 teaspoon dried basil

-salt and pepper

-1 teaspoon of olive oil


Next Step:

-Preheat oven to 450 F

-Drain your artichokes, then gently squeeze out any excess water and pat dry with paper towels.

-In a small bowl mix 2 eggs with 1/4 cup of parmesan. Set aside.

-In another small bowl, mix together your breadcrumbs, 1/4 cup of parmesan, garlic powder, and 1/4 teaspoon of pepper. Set aside.

-Go back to your artichokes and gently cut them in half (vertical-from top of step to the bottom).

-Set up a cooling rack on top of a baking sheet.

-Then dip your artichokes into the egg mixture, then into the breadcrumb mixture. You may have to repeat this twice to get a good coating of breadcrumbs on your artichoke. Then set your seasoned artichokes on the cooling rack.

-Put into the oven for 10 minutes.

-While your artichokes are in the oven, add the can of crushed tomatoes, the chopped garlic, dried basil, and a pinch of salt and pepper to a small sauce pan. Heat on medium until it starts to bubble and then turn to low. Continue to stir.

-After 10 minutes, take your artichokes out and flip them. Also drizzle a very small amount of olive oil on your artichokes to help them crisp. Put them back into the oven for an additional 10 minutes.

-Stir your sauce.

-After the 10 minutes is up remove the artichokes and set your oven to Broil.

-In an oven safe dish (I like to use an oval au gratin dish or an oval cast iron skillet) add a thin layer of sauce coating the bottom of your dish.

-Add your artichokes on top, and cover each artichoke with sauce.

-Then place the mozzarella on top of each artichoke and sprinkle on the remaining parmesan.

-Broil for 5 minutes OR until the top of the mozzarella starts to bubble and brown. Watch this step carefully.

-When they are done sprinkle fresh chopped basil on top.
