Avocado Tomato Corn Salad!!
This is the perfect summer salad! It is light, refreshing, healthy, and delicious! You can serve this as a side dish at a summer BBQ or add some chopped Romain lettuce to it and enjoy it for lunch or dinner.
-2 ripe avocado's (chopped)
-2 cups seedless cucumber (chopped)
-2 corn on the cob
-2 cups cherry bombs or cherry tomatoes (halved)
-1/4 cup red onion (chopped)
-1/4 cup fresh squeezed lemon juice
-1 tablespoon & 1 teaspoon extra virgin olive oil
-1 clove of garlic (leave whole)
-1/2 teaspoon salt
-1/4 teaspoon ground pepper
-1/8 teaspoon red pepper flakes
-Boil the corn for 15 minutes on the stove top. Then slice off the kernels for your salad.
-To a large bowl add the cucumber, tomatoes, onion, corn, and avocado.
-In a small cup add the olive oil, lemon juice, garlic clove, salt, pepper, and red pepper flakes.
-Mix with a spoon to combine.
-Remove the garlic clove and pour the dressing all over the salad.
-Gently toss the salad.
-Serve and ENJOY!!
