Asian Brown Rice Broccoli Bowl!


This healthy and delicious Asian Brown Rice Broccoli Bowl is always on rotation at my house! I am obsessed with the sauce, it is that good!! This bowl is packed with nutrients, vitamins, minerals, fiber, antioxidants, magnesium, and more!

If you make your brown rice in advance, this meal can be ready and on the table in 15 minutes. You can also add chicken, tofu, salmon, or shrimp to this recipe for added protein. Enjoy!


Ingredients:

-Head of broccoli cut cup

-Avocado Oil

-Red pepper (sliced)

-Salt and Pepper

-1/2 Avocado

-1 tablespoon sesame seeds

-Brown rice for serving


Sauce:

-1 tablespoon Kimchi Paste ~Click HERE to order my favorite Kimchi Paste!~

-1 clove of garlic (chopped)

-3 tablespoons soy sauce (low sodium)

-2 tablespoons rice vinegar

-1/2 tbsp fresh ginger (grated)

-1 tablespoon pure maple syrup

-1/2 tablespoon sriracha

-1/2 cup water

-1/2 tablespoon corn starch


*I used an air fryer to roast the broccoli and red peppers. If you don't have one you can roast them in a 400 F oven for 15 minutes.) Click HERE to see the air fryer that I use and love!


Next Step:

-Cook your brown rice. That is the longest part of this dish!

-Chop up your broccoli and spray with avocado oil. Sprinkle with salt and pepper and toss.

-Add 2 tablespoons of water to the bottom of your air fryer. Preheat at 400 for 3 minutes and then add the broccoli. Cook for 8-10 minutes making sure to toss 1/2 way through. (Add in the sliced red peppers with 5 minutes to go.)

-Meanwhile, on the stove top add in the soy sauce, rice vinegar, kimchi paste, garlic, ginger, maple syrup and water. Heat for 3 minutes and then stir in the corn starch. Simmer and continue to stir. You will see it start to thicken.

-While the broccoli and sauce are cooking, heat up the sesame seeds on low heat on the stove top. This will only take a minute or two.

-Spray the avocado with avocado oil and sprinkle the toasted sesame seeds all over the top.

-Plate your dish. Add the rice, roasted broccoli, red peppers, and avocado. Drizzle the sauce all over.
