
These pancakes are delicious!! They are so flavorful, healthy, and will keep you full throughout your morning. The apple compote on top completes the dish and adds a sweet bonus to your pancakes. My daughter insists the whole house smells like fresh baked apple pie when I make the compote! YUM!
Prep time: 10 minutes (including compote) Cook time: 4 minutes (pancakes)
Ingredients:
-3/4 cup white whole wheat flour
-1/2 cup rolled oats
-3/4 teaspoon cinnamon
-1/8 ground nutmeg
-1/2 teaspoon baking powder
-1/8 teaspoon baking soda
-1/8 salt
-3/4 cup oat milk
-2 tablespoons pure maple syrup
-1 egg
-1/2 teaspoon vanilla extract
-1 apple (peeled and grated)
-1/2 tablespoon butter
Apple Compote
-1 apple (peeled and sliced)
-1/2 teaspoon cinnamon
-1 tablespoon pure maple syrup (can use more if needed)
-1 tablespoon water (can use more if needed)
Next Step:
-Start your compote. On the stovetop add your sliced apples, cinnamon, maple syrup, and water. Put on low heat and stir. You will see your apples soften and the compote thicken. Takes around 8 minutes.
-While you compote is cooking, mix together your dry ingredients. Oat, flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Combine with a spoon.
-In another bowl add your wet ingredients, the egg, milk, syrup, and vanilla extract. Whisk to combine.
-Add. your wet ingredients to your dry ingredients and mix until combined.
-Fold in your shredded apple.
-Remember to stir your compote!
-On the stove top on low heat- add the butter in a large pan and start making your pancakes.
-Flip when they start to bubble. Cook a few minutes on each side.
-Add your pancakes to a serving dish and pour your apple cinnamon compote on top of your pancakes.
-Serve with syrup and fresh berries.
