Almond Butter Cookie Baked Oatmeal!


This heart healthy, gluten free, and protein packed breakfast will keep you satisfied and full throughout your morning! All you need is a blender and 5 minutes to put this oat bake together and then pop it in the oven for 25 minutes! So good!!!


Ingredients:

-1/2 cup of quick rolled oats

-1/4 cup applesauce

-1 tablespoon of honey

-1/4 teaspoon baking powder

-1/2 teaspoon ground flax seed.

-2 tablespoons oat milk

-1 egg

-2 tablespoons almond butter (divided)

-Dark chocolate chunks

-1 6oz ramekin (Click to check out my favorite ramekins!)


Next Step:

-Preheat oven to 350 F and take out a 6 oz ramekin.

-In your blender add the oats and blend until it resembles a flour consistency. Pour the oats into a bowl and set aside.

-Next add the applesauce, honey, baking powder, flax seeds, oat milk, 1 tablespoon of almond butter, and egg into the blender.

-Blend until the mixture is smooth.

-Add the oats back in and blend all together.

-Pour half of the batter into the ramekin and then sprinkle a few dark chocolate chunks in.

-Pour the remaining batter on top and then add a few more chocolate chucks on top.

-Bake for 25 minutes.

-In a microwave safe glass bowl melt the remaining almond butter.

-Drizzle the almond butter on top.

-Serve and ENJOY immediately!!!!
