How I love a homemade Açaí Parfait!!! It is the perfect breakfast to start your day. Açaí berries are a superfood and are packed with antioxidants, fiber, amino acids, they are amazing for heart health, carry anti cancerous properties, and can even help to improve cognitive function. I love adding fresh berries, nut butter, granola, and coconut to my açaí parfaits. As a bonus, it only takes 5 minutes to put together!
Ingredients:
-2 tablespoons açaí powder
-1/2 cup frozen strawberries
-1/2 cup frozen blueberries
-1/4 banana
-1/2 cup oat milk
-1/2 teaspoon ground flax seed
Toppings:
-Pecan Almond Granola (or your favorite kind)
-Fresh berries
-Peanut butter
-Shredded coconut
Next Step:
-To your blender add the frozen strawberries, frozen blueberries, banana, açaí powder, flax seed, and oat milk.
-Blend until smooth.
-Add granola and peanut butter to the bottom of your glass.
-Then add a large layer of the blended açaí filling almost to the top.
-Lastly add more toppings! I love to use fresh strawberries, blueberries, granola, coconut, and peanut butter.
-Serve and ENJOY immediately!
