These pecan pumpkin oatmeal breakfast bars are SO delicious!! They are healthy, tasty, and will keep you full throughout your morning. They are packed with oats, pumpkin, pecans, oat milk, maple syrup, and more! They are perfect for breakfast, to serve at brunch, and the perfect "treat" to pack in a school lunch.
Prep time: 8 minutes Cook time: 30-35 minutes
Ingredients:
-2 cups rolled oats (you can substitute GF oats)
-1/2 cup white whole what flour (you can substitute GF or Almond Flour)
-1/4 teaspoon cinnamon
-1 1/2 teaspoon pumpkin pie spice
-1/2 teaspoon ground flax seeds
-1 teaspoon baking powder
-1/4 teaspoon salt
-1/4 cup chopped pecans
-1 cup organic pumpkin (not pumpkin pie puree)
-1 1/4 cup oat milk
-2 eggs
-1/3 cup pure maple syrup
-1 tablespoon raw honey
-2 tablespoons salted butter (melted)
-2 tablespoons granulated sugar
-1/2 cup mini dark chocolate chips
Next Step:
-Preheat oven to 375 and line an 8x8 baking dish with parchment paper.
-In a large bowl combine the oats, flour, cinnamon, pumpkin pie spice, ground flax, baking power, salt, and pecans. Mix with a spoon to combine. Set aside.
-In another bowl combine the oat milk, pumpkin, maple syrup, honey, butter, and sugar. Whisk until combined.
-Then add in your eggs and whisk.
-Add your wet ingredients into your dry ingredients and mix.
-Add your chocolate chips and mix.
-Pour your batter into the baking dish and sprinkle the top with a few extra chopped pecans and chocolate chips.
-Bake for 32 minutes.
-Take out and let rest for 10 minutes.
-Cut into bars and serve!
