Oatmeal Chocolate Chip Cookie Bars!

How I love a warm cookie bar right out of the oven!!! These oatmeal chocolate chip cookie bars are SO good! They are always a huge hit at parties, holidays, and get togethers with friends. They are easy to make and can be ready within 30 minutes. They are also great if you add a big scoop of ice cream on top while they are still warm. YUM!!
Prep: 8 minutes Cook time: 22-24 minutes
Ingredients:
-1/2 cup salted butter (melted)
-3/4 cup light brown sugar
-1/4 cup granulated sugar
-1 egg
-1 teaspoon vanilla extract
-1 cup flour
-1 cup quick rolled oats
-1/2 teaspoon baking soda
-1/4 teaspoon baking powder
-1/4 teaspoon ground cinnamon
-1/4 teaspoon salt
-3/4 cup dark chocolate chips

Next Step:
-Preheat oven to 350 F and line and 8x8 baking dish with parchment paper.
-In a glass bowl melt the butter in the microwave.
-In a medium size mixing bowl add the brown sugar, granulated sugar, and melted butter. Whisk to combine.
-Add the vanilla extract and whisk.
-Add the egg and whisk. Set aside.
-In a large mixing bowl, add the flour, oats, baking soda, baking powder, cinnamon, and salt. Whisk to combine.
-Pour the wet ingredients into the flour/oat mixture. Stir with a spoon to combine.
-Once combined add in the chocolate chips and stir.
-Pour into the baking dish and bake for 22-24 minutes. Until the center is set and the edges are a light golden brown.
-Let cool for 10 minutes.
-Slice, Serve, and ENJOY!!!

I made this recipe (Oatmeal Chocolate Chip Cookie Bars) about 3 times in one week a couple of weeks ago. It was so yummy that it would be gone in a day or two! I just made it again tonight (had to re-up on ingredients) still so good! It is simple and easy, with most ingredients on hand. I had to use self-rising flour, so I eliminated the salt, and the baking soda and powder. Turned out great! Just in case anyone else is in this predicament ~ Thank you for sharing this!
