It's blueberry season!! After blueberry picking with my family, we always enjoy making mini blueberry pies! They are SO delicious and perfect to pair with a big scoop of vanilla ice cream. They are easy to make and one of my favorite summertime desserts!
Ingredients:
-1 cup blueberries
-2 1/2 tablespoons granulated sugar
-1 tablespoon fresh lemon juice
-1 tablespoon flour
-1/8 ground cinnamon
-a sprinkle of salt
-1 egg
-Demerara sugar
-1 roll of butter puff pastry (pre-rolled)
~you can find this in the freezer section of your supermarket.
Next Step:
-Preheat the oven to 350 F and line a baking sheet with parchment paper.
-Take 1 roll of the butter puff pastry out of the freezer and let it thaw completely.
-Once thawed unroll the pastry and add a sprinkle of flour to the top and bottom.
-Add the blueberries, sugar, lemon juice, flour, cinnamon, and salt to a small bowl. Mix to coat all of the blueberries.
-Add a large scoop of the blueberry mixture to the corner of your pastry.
-Fold the pasty over to cover the blueberries.
-Then cut the pastry, leaving enough room to seal the dough.
-Use a fork to seal all around the pastry.
-You will be able to make 4 mini blueberry pies with this recipe.
-Make an egg wash, using 1 egg and a teaspoon of cold water.
-Using a pastry brush- brush the egg wash all over the top of the blueberry pies.
-Then sprinkle Demerara sugar all over the top.
-Bake for 15-17 minutes.
-Let cool and serve with a side of vanilla ice cream!
