Homemade Cinnamon Raison Bread!


This bread will have your house smelling amazing, is easy to make and is SO delicious! My favorite is making french toast with it the next day, and my kids love having it warm right out of the oven with butter. It also freezes really well, which is always a bonus!


Prep time: 10 minutes Rest time: 1 hour Cook time 45 minutes

Ingredients:

-1 cup of oat milk

-1/3 cup unsalted butter (melted)

-1/3 cup granulated sugar

-1/4 cup sour cream

-1 cup raisins

-2 1/4 teaspoon of active dry yeast

-3 1/2 cups of all purpose flour

-1 teaspoon cinnamon

-3/4 teaspoon salt

Cinnamon Swirl

-3 teaspoons ground cinnamon

-1/2 brown sugar

-7 tablespoons unsalted butter (softened-not melted)

Next Step:

-In a small bowl combine 3/4 cup of oat milk with the active dry yeast. Let sit for 8-10 minutes.

-In a large bowl with a stand mixer combine the butter, 1 egg, sugar, sour cream and 1/4 cup of oat milk. Mix until combined.

-In a separate bowl add the flour, cinnamon, and salt. Mix with a spoon to combine.

-Add 1/2 of the flour mixture to the stand mixer and mix on low/medium with the whisk attachment for 1-2 minutes.

-Then add in the oat milk/yeast mixture and mix on low/medium for 1-2 minutes.

-Change the attachment on your stand mixer to the dough hook.

-Add the rest of the flour and mix on medium for 3 minutes. You will see a smooth dough form.

-Then add your raisins and mix on medium for 1 more minute.

-Add your dough to a lightly oiled bowl. Cover and set aside for 1 hour.

-Preheat oven to 375 F and add parchment paper to a 9x5x3 inch loaf pan.

-On a floured surface gently spread your dough out to a large rectangle. (9x20 approximately.)

-Make the cinnamon swirl. In a small bowl add the brown sugar, softened butter, and cinnamon. With a hand mixer, mix for 1 minute until combined.

-With a spatula gently place and spread out all of the cinnamon swirl on your dough. (except around the border)

-Then gently start rolling the dough away from you until the end of the dough meets. Make sure to pinch and seal the edges.

-Place your rolled up cinnamon swirl dough into the baking dish.

-In a small bowl crack the last egg and mix. Brush the top of the dough with the egg wash.

-Sprinkle cinnamon sugar all over the top of the dough.

-Bake in the oven for 45 minutes. Make sure to put a baking sheet under your pan incase any of the cinnamon swirl bubbles over.

-Take out and let rest for 10-15 minutes.

-Slice and ENJOY!!!
