Cinnamon Maple Oatmeal Muffins!

Have I mentioned how much I love muffins!?! These Cinnamon Maple Oatmeal Muffins are the perfect way to start your day. They will keep you full throughout your morning as they are packed with fiber! My kids love packing these muffins in their lunch boxes, and I of course love them with a big cup of coffee.


Ingredients:

-1 3/4 cup quick rolled oats

-1 1/2 cup all purpose flour

-1 teaspoon of ground flax seed (optional)

-1 teaspoon cinnamon

-1 teaspoon baking powder

-1/2 teaspoon baking soda

-1/4 teaspoon salt

-2/3 cup dark brown sugar

-1/2 cup pure maple syrup

-1/3 cup butter (melted)

-1 cup oat milk

-2 eggs

Crumble:

-1/3 cup granulated sugar

-2 tablespoons salted butter (cold)

-1/2 teaspoon cinnamon

-1/4 cup all purpose flour

Next Step:

-Preheat oven to 350 F and lightly butter a muffin pan. This recipe will yield 12 muffins.

-In a large bowl add the oats, flour, cinnamon, baking powder, baking soda, ground flax seeds, and salt. Stir to combine and set aside.

-In another bowl add the brown sugar and maple syrup. Whisk to combine.

-Then add in the melted butter. Whisk.

-Next add in the milk and eggs. Whisk.

-Pour the wet ingredients into the oat/flour mixture and stir to combine.

-Add the mixture to the muffin pan filling 3/4 the way to the top. You will use all of the mixture. Set aside.

-To make your crumble, add the sugar, chopped butter, cinnamon, and flour to a small bowl. Using your hands form a crumble. (This will take a couple of minutes.)

-Sprinkle the crumble on top of the muffins, using all of it.

-Gently push down the crumble so it sticks to the mixture.

-Bake for 18-20 minutes.

-Take out and let rest for 10 minutes.

-Serve and ENJOY!!
