This broccoli soup is Incredible! It is thick, creamy, and so flavorful! The best part is there is NO cream in this recipe!! It is thickened only with potato. This healthy recipe is packed with vitamins, antioxidants, fiber, nutrients, and will keep you full throughout your evening!
Ingredients:
-3-4 cups of broccoli (crowns only)
-2 Idaho potatoes (peeled and chopped to bitesize pieces)
-1 shallot (chopped)
-3 cloves of garlic (chopped)
-4 cups chicken broth
-1/2 - 3/4 teaspoon ground pepper (to taste)
-1/4 -1/2 teaspoon salt (to taste)
-3/4 cup parmesan (grated)
*If you want a thick and creamy soup add all of the potatoes.*
*If you want it thiner only add 1 1/2 potatoes to your recipe.*
Next Step:
-Add the butter and the garlic to a large pot. Sauté for 1 minute.
-Add in the broccoli, potatoes, shallot, and chicken broth. Stir.
-Cover and bring to a boil. Then lower heat to simmer.
-Cook for 20-25 minutes until your potatoes are soft. (At this point it won't look like soup, you just want to get everything soft)
-Using a soup ladle add 1/2 of the soup to your blender and 1/4 cup of parmesan. Blend until thick and creamy and pour into a large bowl.
-Scoop out the remaining soup and add it to your blender with another 1/4 cup of parmesan. (If you have a small blender, you might have to do this in more than 2 steps)
-Add the blended/pureed soup back into your pot. Turn the heat to low to keep it nice and hot.
-Add in the salt and pepper. Stir and taste your soup to see if you need more of either. (I like more pepper)
-Serve immediately and sprinkle extra parmesan on top.
