This might be the most delicious and easy to make recipe!! This is my "go to" cake for any brunch, BBQ, or poolside lunch. I will definitely be serving it at this year's Easter brunch! The crumble on top is my absolute favorite, with the key ingredient being espresso coffee powder. Your guests will be going back for seconds on this one!! Happy Baking!! xo
Ingredients:
-4 tablespoons salted butter (softened)
-1/2 cup granulated sugar
-2 egg whites
-1/2 cup sour cream
-1/2 teaspoon vanilla extract
-1 cup flour
-1 teaspoon cinnamon
-1/2 teaspoon baking powder
-1/2 teaspoon baking soda
-1 Granny Smith apple (remove skin and chop small)
Crumble:
-4 tablespoons flour
-2 tablespoon brown sugar
-2 tablespoon sugar
-2 tablespoon salter butter (softened)
-1 teaspoon cinnamon
-1 teaspoon espresso coffee powder
Icing:
-1/2 cup powdered sugar
-1 1/2 tablespoon milk (I used oat milk)
Next Step:
-Preheat oven to 350 F and line an 8x8 baking dish with parchment paper.
-Take out a hand or stand mixer.
-In a large bowl mix together the butter and sugar.
-Then add in the egg whites, sour cream, and vanilla extract. Mix until combined. (Don't over mix)
-Next add in the flour, cinnamon, baking powder, and baking soda. Mix until combined. (Don't over mix)
-Fold in the chopped apples.
-Pour the batter into the baking dish. Set aside.
-For the crumble, in a small bowl add in the flour, brown sugar, sugar, butter, cinnamon, and espresso powder. Using your hands mix until a crumble forms.
-Sprinkle the crumble all over the batter.
-Bake for 25 minutes. (Be sure to check with a toothpick that it is cooked all the way through)
-Take out and let cool completely.
-To make the icing mix together the powdered sugar and milk with a hand mixer.
-Drizzle all over.
-Serve and ENJOY!!
