Almond Butter Granola!!


Is there anything better than homemade granola!?! It is so much healthier than store bought, and incredibly delicious! I love making big batches of granola and giving them out to friends and family. You can add this on top of yogurt, ice cream, açaí bowls, smoothie bowls, salads, and more! I hope you love it as much as I do! xo


Ingredients:

-2 cups quick rolled oats

-1/4 cup almond butter + 2 tablespoons

-1/4 cup pure maple syrup

-1/4 teaspoon vanilla extract

-1/2 teaspoon ground cinnamon

-a pinch of salt

-1/2 cup sliced almonds

-3 tablespoons mini dark chocolate chips

Next Step:

-Preheat oven to 325 F and line a large baking sheet with parchment paper.

-In a large bowl combine the oats, cinnamon, and a pinch of salt. Stir and set aside.

-In a glass bowl microwave the almond butter and maple syrup for 40 seconds. Take out and mix.

-Add in the vanilla extract and pour the mixture over the oats.

-Mix to combine and pour on the parchment paper and spread out.

-Bake for 23 minutes and stir half way through.

-Meanwhile on the stovetop toast the sliced almonds for 4-5 minutes. Mix continuously while toasting as they can burn very quickly. Take out and set aside to cool.

-Take out the granola and cool completely. (Break granola apart with a spoon while still warm)

-While the granola is cooling it will crisp up.

-Add the granola to a large bowl, 1/4 cup of toasted almonds, and the mini chocolate chips. Stir to combine.

-Add on top of yogurt, açaí bowls, ice cream, and more!
